Secondary fermentation
I'd used the Spunding valve as an indicator of secondary fermentation, dropped the pressure and it didn't rise again, suggesting the yeast had done its stuff.

Secondary fermentation completed

Left a few days then started the process of carbonating- not much headspace
## Drinking

Now drinking, even better now its back up to the correct serving temp of 12-14ºC (traditional beer cellar), with CO2 pressure adjusted accordingly.
